Ingredients
6 cups grated raw beetroot
3 cups chopped parsley
2 cups grated carrot
1 stalk celery finely chopped
2 spring onions chopped

Combine in a bowl.

Dressing
1/4 cup olive oil
1/8 cup vinegar
1/8 cup lemon juice
3 cloves crushed garlic

Blend together then toss through vegetables.  Sprinkle 1/4 cup walnuts
on top. Serve & enjoy!
